22 April 2012 + Zucchini Muffins

Today started out with a nice breakfast, again at The Corner Store Cafe, followed by a 1 1/4 workout at the gym with one of my best friends’ sister, Sophie who is studying to be a personal trainer. It was great, and it’s nice to be finally working out with someone.

Today I made Zucchini Muffins. I was fairly hesitant to how they would work, because I found a few recipes on the net that looked good, but didn’t have all the ingredient to make them off just one recipe, so I experimented a bit. Chopped and changed a few things and ended up with REALLY nice muffins! I love to bake, and these were easy and delicious.

Zucchini’s are approximately 95% water and are very low in calories (not that I’m counting) so they are an excellent diet food and they also contain vitamin C. I’m only really just starting to eat zucchini, so this was a great way to get some extra veggies into my diet. Every little bit helps!

The result was wonderful, flavourful (and you can’t really taste the zucchini at all) and moist.

I haven’t had a great diabetes today, a few higher numbers, but still nothing like I was getting.

In other news, Sam and I booked our Thailand holiday today. We are going in August to Bangkok and Karong, it will be our first overseas (of many to come!) together. We are both pretty excited.
