Being sick, One Long Table and my favourite recipe yet

I promised this recipe last weekend. But a lot has happened between then and now. First of all, I was really sick last Sunday night. I went out for a couple of drinks for St Patricks Day and wound up violently ill. It was apparently a virus that left me sick for a couple of days, not fun. Then I had one good day, in which I had an all day meeting, locked in a room with 8 other people. Funnily enough, the next day I woke up with the start of a cold. I took the day off on Friday to kill my germs with fruit and veggies (seriously, I had like 4 fruit and veggie juices and made a big pot of veggie soup). Being sick as a diabetic isn’t fun. I’ve been luckier than most I think, I’ve never had keytones or any other issue that can come with getting sick as a diabetic. I just get high blood sugar levels, which really doesn’t help with the sickness. In fact, it’s the pits. It makes me really, really thirsty, and I feel sick in my stomach. It’s actually really hard to explain the feeling. There isn’t a great deal I can do about it, except watch my blood sugar levels more closely, and adjust as necessary. But it is times like this where I’m just over being diabetic. It’s never fun in the first place, but combine being sick and having to do EXTRA work on top. It’s the pits.

Friday night, we drove out to my parents place because my mum (who writes Garden Path Food) was putting on an event called One Long Table in her town. One Long Table brings together all the different cultures in the town, and they serve one or two dishes from their country and the whole town can try it out. It’s such a fun event (though setting up tables, chairs and tents is not fun when you’re sick). I’m glad we came out to help out and taste all the different foods.

Now, my new favourite recipe! The other day, I couldn’t think of what to make for dinner, all I knew was I wanted it to have pumpkin in it, I wanted a curry flavour, but I didn’t want anything hot! I decided on salad. This is amazing for a couple of reasons. 1) My entire life, I have hated almost all green vegetables. Most of all, I’ve hated lettuce. It’s only been the last couple of years where I’ve started to eat spinach and a few of the fancy lettuces. I will never bring myself to eat iceburg lettuce and 2) I used to think salads were sooooo boring. I don’t think this anymore, in fact, I love coming up with new salads. I’ve also got a bit of an obsession with crumbing things lately (I made Salt and Pepper crumbed Mushrooms a few days ago), so I decided to crumb the tofu after rolling it in some coriander. The dressing, I made out of curry paste and coconut milk. Delicious!

Lastly, I will leave you with this photo. A little while ago I heard the rumblings of some thunder. I looked up and saw this massive black cloud fast approaching. A few minutes later it was pouring rain. I love storms, so what a perfect end to the weekend.

  1. And thank you to you and Sam for all your support and help. I love the way it has become such a family an community event- the clean up was amazing, yet again the community (and my lovely family) jumped in to help
