Asian Inspired Seaweed Salad

Asian Inspired Seaweed Salad

Large bunch of kale, shredded and massaged
1 or 2 large silverbeet leaves, shredded
3 small radishes, diced finely
3 shallots, diced finely
3/4 cup cherry tomatoes, halved
1 large carrot, julienned
1 large continental cucumber, julienned
3 or 4 strips of Wakame, rehydrated then cut into small pieces
Large pinch of Arame, rehydrated
Sprinkle of dulse flakes

2 inch piece of ginger
4 tbsp. apple cider vinegar
2 tbsp. agave syrup
3-4 tbsp. lemon juice
1 tbsp. white miso paste
1-2 tbsp sesame oil

  1. Mix all the salad ingredients in a large bowl
  2. In a blender, blend all the dressing ingredients
  3. Pour as much dressing over your salad as you like, save some for other salads if you don’t want to use it all!
